Day 2: Willpower & eating ALL of the snacks!

Day 2 hit me like a bus when I woke up – I was hungry and already thinking about food, I was pretty sure i’d be lacking Willpower! I knew today was going to be interesting, Day 1 of a diet or challenge like this is pretty easy. Day 2 is where it gets interesting but if you can push through it then your probably going to make it far. Twice today I nearly caved – Twice today I stuck to my plan and Willpower got me though.

 

Breakfast

Thought I would mix it up this morning otherwise I’ll end up burning out the Yogurt & Frozen Fruit when I know its a safe bet. ASDA’s Jungle Bites are top draw! Wasn’t sure what to expect but I think the only problem with these might be the box is a bit small…

 

Snacking & Willpower Support!

I struggled for snacking today, I entered what can only be described as ‘Black Hole Mode’ and my hands just kept finding the snacks. Having filled my draw with as many Vegetarian Snacks I could find, I was hoping this would help out at a moment my Willpower was crumbling. The Snacks also came out quite early, Its a trend I’ve noticed when I’m sitting at my desk trying to crack on with work as quickly as possible and having to do a lot of thinking / planning.

So I’ve already munched my way though lots of the Chocolate Rice cakes, easily the best ones like it. They are also a firm favorite in the office and I could feel the eyes on me as soon as I got them out.

Not got much to say about the Nutri-Grain Bar, take it or leave it in my eyes. Now lets move onto the Shots. Having gone crazy with the Whitworth Shots in Tesco last night I also saw these Tesco branded ones and thought I would give them a try. The Spicy Shots were great, they seemed to have a good mix of different seeds etc and just enough heat. The Pea & Bean Seed Shot however will not be bought again. The Beans were okay but the Pea’s were horrific and there was something else in it I couldn’t recognize but the taste was awful.

 

Lunch

Lunchtime came & Burger Friday was called. It took a lot of Willpower to say ‘No Thank You’. Curse my Willpower! (The Burgers are amazing!)

With Yesterdays Lunch still in my head and having enjoyed it so much I wanted to do it again. This time I managed to do it without making a mess in the Microwave (Sorry cleaners!) thanks to this crazy microwave gadget that’s like a pot with a handle & lid. Something a bit like this… Only thing I will say is I thought the Rice was a bit hard, maybe I overcooked it, but the Beans are out of this world!

 

Dinner

Well Dinner was difficult. Its Friday night and I want a Takeaway. Chinese, Indian. McDonalds – ALL OF IT!

Baked Mushrooms with Spring Onion, Egg & Cheese served with a Tomato & Spring Onion Salad & Sun Blushed Tomato Humus

Baked Mushrooms with Spring Onion, Egg & Cheese – Served with a Tomato & Spring Onion Salad and Sun Blushed Tomato Humus

I totally made this up as I went along but it was Lush!

Ingredients;

  1. Large Mushrooms x 2
  2. Spring Onions x 2
  3. Egg x 2
  4. Cheese (handful of grated)
  5. Lettuce
  6. Baby Tomatoes
  7. Sun Blushed Tomato Humus (or another flavor!)
  8. Slice of Wholemeal Bread
  9. Salt & Pepper

Recipe;

  1. Preheat the Oven @ 180C
  2. Prepare the Mushrooms by washing, removing the stalk and scraping out the insides slightly if you don’t think they will be deep enough for an egg
  3. Sprinkle a little Salt & Pepper into the Mushrooms
  4. Chop Spring Onion – spread half between the Mushrooms and save the other half for the salad
  5. Crack the Egg’s into the Mushrooms
  6. Place them on a Baking Tray and put into the Oven for 10 Minutes
  7. During the 10 Minutes prepare your salad, Toast the Bread & Cut into small cubes and slap down your Humus
  8. Take the Mushrooms out of the oven
  9. Throw the Cheese onto the Mushrooms
  10. Sprinkle a little Pepper on top
  11. Place back into the Oven for 5 Minutes
  12. Serve the Mushrooms immediately & enjoy!

I absolutely loved this and will happily eat it again many many times. Pretty sure you could mix it up quite a bit as well. I’m really surprised how good this tasted and not any Meat in sight. Today has been full of surprises, not only for good tasting food but also my Willpower 🙂
